To pop the cork without injury, wastage or breakage, first ensure that the Cava is chilled, if it is too warm it will spray out of the bottle. Hold the bottle away from your body and out of the line of fire of anyone’s face or anything breakable.  Gently remove the foil cover and then untwist the wire around the wire cage or “muselet” and remove it.  Now, using a tea towel to cover the cork and avoid spills if you wish, hold the bottle against your hip with your dominant hand.  Use your other hand to hold the cork firmly. Now gently turn the bottle as you hold the cork to remove it without spilling a drop.
